Dry, perfect aperitif; mainly Chardonnay, bright and fresh; barrel-fermented.
Walking caviar, blini.
First course
Alphonse Mellot Sancerre « La Moussiere »
Glorious Sauvignon from a famous, pure limestone slope, textured, ripe and luscious.
Pan roasted halibut cheeks, sping asparagus, miso burre blanc, black truffle.
Second course
Domaine Brusset Rasteau La Bastide
A very deep crimson colour. A very complex nose of small blackberries with very motivable spice notes. Very powerful in mouth with an excellent lingering, tannins are there but they are rounded, harmoniously woody, good aromatic persistence of sloe and liquorice.
Breast of Poulet Rouge, pommes, fondant, bacon, caraflex cabbage, coq au vin jus.
Third course
Domaine Jessiaume Santenay 1er Cru Gravières
The nose is beautiful and powerful, with notes of black fruits. The palate is round and mouth watering with a beautiful energy. The tannins are present but remain elegant. Harvesting & sorting done by hand.
Filet, braised beef cheek, escargot, kohlrabi puree
Dessert
Chateau les Justices (sister wine of Gilette) Sauternes
Late harvest Semillon, picked over several weeks, berry by berry, then fermented and aged in stainless steel.
